Serves 10 guests

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Method

To prepare the Syrup: Put all the components into a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, remove from the heat and leave to cool down completely. Pour to a sealable bottle, close it and refrigerate it in the fridge, where it will keep for up to four weeks.

For the Batch Mix: Mix the specified liquids in a large bottle, leave to sit for 60 minutes, then pass it through preferably using a fine cloth, so it's perfectly clear.

When ready to serve: Add 85ml of your batch mix into a cocktail shaker filled with ice, and stir lightly for a minute to cool it down. Pour into a cold coupe glass or equivalent, decorate with some cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
